TOFU "CRABCAKES"
1 block of firm silken tofu
1 sm red onion, minced
1 Tbsp grated carrot
handful of Katuk (for locals, for others, use spinach) chopped in tiny ribbons
1/2 cup bread crumbs
1 egg
1/2 tsp McKay's vegan chicken seasoning
1/2 tsp Old Bay Seasoning
1/2 tsp grated lemon peel
couple of drops of liquid smoke
salt & pepper.
Mash all ingredients together and form into patties. Fry in hot oil until golden brown.
LEMONY SLAW:
shred cabbage with a mandolin, chop a handful of Katuk, 1/2 stalk of leak, 1/2 tsp lemon peel, lemon juice, dash of vegetable oil, salt, pepper & sesame seeds. Toss together and place as a bed for the tofu "crabcakes."
