GLUTEN-FREE LEMON BARS
Bottom Layer
½ cup butter
1 cup gluten-free AP or regular AP flour
¼ cup powdered sugar
1 tsp grated lemon zest
Top Layer
1 cup sugar
2 Tsp flour
2 eggs
1 ½ Tbs lemon juice.
Instructions
Mix the first four ingredients together and pat into a greased 8” square pan. Bake 20 minutes at 325°
Remove from oven and allow to cool slightly.
Beat together the remaining ingredients and spread on top of the prepared base. Return to oven and bake for 25 minutes at 325° Allow to cool. Sprinkle with powdered sugar and cut into squares.
Garnish with a lemon twist and a sprig of mint.
